A Happy Dad makes a Happy Child (GF Vegan Dark Chocolate Coffee Mint Banana Ice Cream)

Love Ingredients:

400 gms frozen sliced bananas
1 T cocoa powder
1 T soluble coffee granules
1 T coconut sugar
2 T hot water
½ c almond milk (or any plant-based milk of choice)
⅛ t mint extract (or just a few drops if you’re not a fan of mint flavor)

How to Spread Love:

1. Dissolve cocoa powder, coffee and sugar in hot water.
2. In a blender, add the frozen bananas together with the liquid mixture. Pulse for 30 seconds a few times.
3. Add the milk and blend until smooth.
4. Add the mint extract and blend for 10 seconds.
5. Transfer to a mixing bowl. Fold in the dark chocolate chips and cashews.
6. Transfer to a freezable container and cover with saran/cling wrap.
7. Freeze for at least 8 hours or overnight.
8. To serve, place in the refrigerator for about an hour or 2 before scooping.
9. Indulge in this guilt-free indulgence whilst thinking of your favorite person!

Notes:
If the mixture is too thick, you may add more almond milk, 1 TBSP at a time.
